INGREDIENTS
2 tomatoes, diced
2 cloves garlic, minced
3/4 cup fresh mushrooms, sliced
1 cup spinach, rinsed
2.5 cups firm or extra firm tofu, crumbled
1/2 teaspoon low-sodium soy sauce
1 teaspoon lemon juice
salt and ground black pepper, to taste
INSTRUCTIONS
STEP 1
Coat a medium-sized skillet in cooking spray and place over medium heat.
STEP 2
Add the tomatoes, garlic, and mushrooms and sauté for 2 – 3 minutes.
STEP 3
Reduce heat to medium-low and add the spinach, tofu, soy sauce, and lemon juice. Cover with a tight fitting lid and cook for 5 – 7 minutes, stirring occasionally. Sprinkle with salt and pepper.
