INGREDIENTS
2 (14 ounce) packages low-fat extra-firm tofu, drained and cubed
1/2 teaspoon salt, divided
6 cups broccoli florets
1 cup orange juice
1 tablespoon chipotle chiles in adobo, minced
1/2 cup fresh cilantro, chopped
INSTRUCTIONS
STEP 1
Coat a large non-stick skillet in cooking spray and place over medium-high heat. Add the tofu and 1/4 teaspoon of the salt. Stir occasionally and cook for 7 – 9 minutes, or until golden brown on all sides. Transfer to a plate and set aside.
STEP 2
Recoat the skillet in cooking spray, add the broccoli and the remaining 1/4 teaspoon salt. Sauté for 1 – 2 minutes, until the broccoli is bright green. Add the orange juice and chipotle chiles. Continue to sauté for 2 – 3 more minutes, until broccoli is just tender.
STEP 3
Return the tofu to the pan and cook for about 1 – 2 minutes, until tofu is heated through. Remove from heat and stir in the cilantro.
