INGREDIENTS
2 large bananas, ripe
1/2 cup date paste
3/4 cup almond milk
2 teaspoons cinnamon
8 slices whole grain cinnamon raisin bread, cubed
1/2 cup coconut milk
INSTRUCTIONS
STEP 1
Preheat oven to 375°F.
STEP 2
In a food processor or blender, add the bananas, date paste, almond milk, and cinnamon and blend until smooth.
STEP 3
Transfer to a large mixing bowl. Add the bread cubes to the mixing bowl and mix until well combined.
STEP 4
Divide the bread mixture into 4 ramekins, pour 2 tablespoons of the coconut milk over each. Place in oven and bake for 30 minutes, or until bread is golden and caramelized.
