6 cups (10 ounce bag) fresh spinach, rinsed
2 tablespoons golden raisins
1 tablespoon pine nuts
2 cloves garlic, minced
2 teaspoons balsamic vinegar
1/8 teaspoon salt
1 tablespoon low-fat Parmesan cheese, shredded
INSTRUCTIONS
STEP 1
Coat a large non-stick skillet or saucepan in cooking spray and place over medium-high heat. Once hot, add the raisins, pine nuts, and garlic. Sauté until fragrant, about 30 seconds.
STEP 2
